5 each norwegian salmon fillets, 5 oz.
2 tbsp. oriental sesame oil
1/2 cup soy sauce (light)
5 each capers, drained
1/2 cup golden raisins
as needed fresh ground pepper
3 cups cooked rice (basmati or jasmine optional)
green peppercorn teriyaki dressing:
2 tbsp. soy sauce (light)
2 tbsp. mirin
2 tbsp. sake
2 tbsp. rice wine vinegar
1 tbsp. green peppercorns, minced or lightly crushed
1 small garlic clove, minced
1/4 cup vegetable oil
1. Spread plates with oil, placing salmon in middle. Sprinkle soy sauce, capers, raisins and pepper on top of Norwegian Salmon fillets. Cover with foil or wrap in parchment paper, and cook in 350°F oven 2-3 minutes.
2. For dressing, whisk all ingredients together.
3. Serve with ˝ cup cooked rice and a green salad with Green Peppercorn Teriyaki dressing.
